Our Flour
We use USDA Certified Organic Polselli Tipo 00 — milled in Italy from 100% Italian-grown organic wheat, where even the seeds are sourced from Italian soil. Family-milled since 1848 and trusted by the world's best pizzaiolos and pastry chefs in over 35 countries, Polselli is widely regarded as a global benchmark for Tipo 00. The result is a flour that's cleaner, finer, and gentler on your body.
The finest milling grade in Italy's classification — silky texture and a more tender crumb than standard all-purpose flour.
Pure endosperm with minimal bran, producing flour with a soft, natural off-white color — never bleached to look unnaturally white.

As certified BIO (organic) wheat, no synthetic pesticides or herbicides are used at any stage — from seed to harvest. Italy also bans pre-harvest glyphosate desiccation by law.
No potassium bromate or artificial dough conditioners. Quality wheat doesn't need chemical crutches.
Naturally aged and whitened — no chlorine gas, no benzoyl peroxide, no shortcuts. Just patience and craft.
So why go through all this trouble? Because not all flour is made the same way. Let us walk you through what we look for.
Our GF Flour
We tested every gluten-free flour we could find, and every one of them broke a rule we weren't willing to break. So we built our own. Four organic ingredients, weighed and blended by hand in our gluten-free kitchen — nothing else. The ratio took us a lot of loaves to get right, so we keep that part to ourselves.

Rice-based blends are the industry default — and rice is one of the crops most prone to accumulating inorganic arsenic and cadmium from soil. Several carry Prop 65 warnings. Ours has none, because ours has no rice.
Both come from the cassava root, and the difference matters. Cassava flour is the whole root, dried and ground, so whatever the root pulled from the soil stays in. Tapioca is only the washed, extracted starch. We use the starch.
We bind with organic whole psyllium husk instead — a plant fiber, not a lab-fermented additive. Better crumb, cleaner label, and your gut can tell the difference.
Sorghum, millet and potatoes are all crops conventionally sprayed with glyphosate days before harvest — same practice as wheat. Certifying every one of them organic is the whole point. We skipped oats entirely for the same reason.
Some well-known "gluten-free" European flours are built on deglutinated wheat starch. That's a processing trick, not a wheat-free flour. Ours starts from naturally gluten-free grains.
Most gluten-free baking runs on modified food starch — starch chemically altered to behave. Ours are native starches, unmodified and unbleached, exactly as they came out of the root.
What's In Your Flour?
Sourcing the way we do costs more and takes longer, so it's fair to ask what we're actually avoiding. Three things, mostly. Here's what each one is, and why we went looking for flour without them.
Two of the three below are wheat-flour problems, and we won't pretend otherwise: bromate and bleaching don't apply to gluten-free flour. Glyphosate does — which is exactly why every grain in our gluten-free blend is certified organic too.
