What's In Your Flour?

The Problem with American Flour

Most flour sold in the U.S. contains chemical additives and pesticide residues that are banned or restricted across Europe, Canada, and dozens of other countries. Here's what you're probably eating — and don't even know it.

⚠️ Glyphosate (Roundup Weed Killer)

  • It's in your bread. Independent testing has found glyphosate residues in wheat flour, bread, oats, pasta, and cereal sold at major U.S. grocery stores — including popular brands marketed as "healthy."
  • The WHO classifies it as probably cancer-causing. In 2015, the World Health Organization's cancer research agency classified glyphosate as "probably carcinogenic to humans," linked to non-Hodgkin lymphoma.
  • It's sprayed right before harvest. Many U.S. farmers spray glyphosate directly onto wheat and grain crops just before harvest as a drying agent — a practice called "desiccation" — which dramatically increases residue levels in the final product you eat.
  • Italy banned this practice. In 2016, Italy's Ministry of Health banned pre-harvest glyphosate spraying and restricted its use in public areas.
  • Courts agree there's a problem. Bayer (which acquired Monsanto) has paid over $11 billion settling roughly 100,000 lawsuits from people alleging Roundup caused their cancer.

🧪 Potassium Bromate (Bromated Flour)

  • Classified as a possible carcinogen. The International Agency for Research on Cancer (IARC) classified potassium bromate as "possibly carcinogenic to humans" in 1999. Studies have linked it to kidney, thyroid, and gastrointestinal cancers in animals.
  • Banned across much of the world. Potassium bromate has been banned as a food additive in the European Union (since 1990), Canada, the UK, Brazil, China, India, Nigeria, and many other countries. In the U.S., it's still legal — and still widely used.
  • Hiding in your grocery aisle. The Environmental Working Group has identified over 200 products containing potassium bromate currently sold in the U.S. The FDA hasn't formally reviewed the additive since at least 1973.
  • Our flour is 100% unbromated. Italian Tipo 00 flour relies on quality wheat and expert milling — not chemical shortcuts.

⚪ Chemical Bleaching (Bleached Flour)

  • Whitened with industrial chemicals. Common bleaching agents include chlorine gas, chlorine dioxide, and benzoyl peroxide. These chemicals alter the flour's protein structure and strip away natural pigments.
  • Banned across the EU. The use of chlorine, bromates, and peroxides as flour bleaching agents is not permitted in the European Union. European flour is aged naturally — the way it's been done for centuries.
  • Natural aging is better. Unbleached flour is whitened through natural oxidation over time. It takes patience, but the result is a cleaner flour with better flavor and no chemical residue.
  • Our flour is 100% unbleached. Italian Tipo 00 flour gets its beautiful color and silky texture from precision milling and careful grain selection — not chlorine gas.

Polselli Organic Tipo 00 — A Better Flour

We use USDA Certified Organic Polselli Tipo 00 — milled in Italy from 100% Italian-grown organic wheat, where glyphosate desiccation is banned and chemical additives are forbidden. The result is a flour that's cleaner, finer, and gentler on your body.

Why Polselli Organic 00? Our flour is USDA Certified Organic Polselli Tipo 00 — milled in Italy from 100% Italian-grown organic wheat where synthetic pesticides, herbicides, and GMOs are forbidden by law. Combined with Italy's existing ban on pre-harvest glyphosate spraying and chemical bleaching agents, this is the cleanest flour you can bake with. Better flour costs more — but your health is worth more.

We use Kerrygold Irish butter because Irish dairy cows graze on fresh grass for most of the year, producing butter with a higher butterfat content (82%+) than standard American butter (80%), more omega-3 fatty acids, and that unmistakable golden color from natural beta-carotene.
